Pét-Nat is made with a different technique to other sparkling wines. Pétillant Naturel wine is made, as the name implies, by a natural process. Before the wine’s first, and only, fermentation process is fully complete, it is bottled. This early bottling results in carbon dioxide being formed from the natural sugars already in the wine and turning into bubbles. This natural will have a cloudy appearance with no added sulfur, no fining and filtering.
The rosé version is made from Shiraz, Nebbiolo and Sauvignon Blanc from various regions in NSW.
